Every PDF can carry a small set of document properties inside it, separate from its visible content: a title, an author, the software used to create it and the one used to produce the final PDF, and the dates it was created and last changed. This information is set by whatever program made the file, is not always filled in, and is not always visible unless you look for it.
Checking a document's stated author and creation date can be a useful sanity check, for research, for verifying a document matches what it claims to be, or simply out of curiosity about how a PDF was made. It is also worth checking before sharing a document externally, since an author name or company left in the properties travels with the file even after the visible content has been edited.
These properties are set by whoever created the file and are not verified or enforced by the PDF format itself, so they can be inaccurate, outdated or missing entirely.
