Why cups and grams do not convert one to one

A cup is a measure of volume and a gram is a measure of weight, so the conversion depends on how dense the ingredient is. Water weighs about 237 g per cup, while flour, which is full of air, weighs about half of that. Densities are averages: how you fill the cup changes the weight.

Measuring tips for baking

  • Weigh when you can. A kitchen scale is the most reliable way to bake, because it removes the differences between cups.
  • Spoon and level flour. Scooping with the cup packs it and can add 20% or more to the weight.
  • Pack brown sugar into the cup, as most recipes expect, and do not pack flour or icing sugar.
  • Check where the recipe comes from: a cup in an Australian recipe is 250 ml, not 237 ml.

How many grams are in a cup?

Is a cup always 240 ml?
No. The US cup is 236.6 ml, the metric cup used in Australia, New Zealand and Canada is 250 ml, and many recipes round to 240 ml. The difference is small for one cup but adds up in large quantities.
