Instagram shows only the beginning of a caption, roughly the first 125 characters, before the more link. That first line decides whether people keep reading, so put the hook, the question or the key information there and keep the details for later. The counter helps you see exactly how much text you have before and after that point.
Line breaks and emoji count towards the total, so a caption with many blank lines and emoji fills up faster than plain text. Draft it here, where you can also see word count, reading time and your most repeated words, and paste it into Instagram once you are inside the limit.
